Some people ask; is Abakaliki rice the same as ofada rice?

Ofada rice is unpolished; short/small grains… Brown aromatic, where as white ofada rice (also called Abakaliki or fake ofada rice) is typically non-aromatic.

The ofada rice is originated from the southern west of Nigeria. Which the rice is used in a variety of dishes. Ofada Rice’s are mostly blends,and some of the rice varieties in the blends are not indigenous to Africa; however,they usually also contain African rice.


The rice is traditionally served in a leaf called the Uma leaf (Thaumatococcus daniellii) with a sauce of ‘Atarodo'(spicy) and ‘Tatase'(sweet) pepper, onion, locust beans, palm oil, and Meat…it is also served along with vegetable stew that may contain locust beans as an ingredient. Over the years, it is believed that the leaf makes the ofada rice taste 😜 more delicious 😋and brings out the uniqueness compared to other rice varieties.

How to prepare your locally delicious ofada rice and sauce
You are going to start with the ofada sauce first because if you start with the rice first it might get cold, and I really like my food hot or not too cold😊. And secondly the sauce is what brings the best of the ofada rice,it’s just like the icing on a cake🎂🤗 so we must make sure that goes well,okay?.😊Now let’s get our ingredients ready 😃😏
INGREDIENTS
Ofada rice:
2 cups of ofada rice
4 cups of water
1 tsp of salt
1 tsp of vegetable oil
Ofada sauce:
1/4 cup of palm oil
1 tbsp of Iru(Locust Beans)
1kg of assorted Meat(Shaki,kpomo,liver,..)-already cooked
600g of cooked chicken (optional)
1cup of chicken broth (optional)
1 tsp of salt
1 seasoning cube
1 tbsp of crayfish
1 medium onion bulb
Green tomatoes
Green Bell peppers
Green habanero pepper
METHOD
Ofada sauce:
Blend green tomatoes, peppers and onion. place in a pot and boil for 10-15 minutes.
Heat up a pot and add palm oil. Allow it to bleach for about 10 minutes.(this means leaving it to heat up and smoke until it is almost similar to vegetable oil) ,mind you; lower the heat to avoid oil catching fire because palm oil are really sensitive. After 10 minutes, allow to cool a bit.
Add chopped onion, saute, then add the boiled tomatoes/pepper mixture.
Add salt, Iru(locust beans), assorted Meat and the crayfish,then cover the pot and allow to cook for 5 minutes and then simmer.
Looking Good right 👌👍💯 well, don’t forget we have to make our main dish “the ofada rice“🥘🍱🍚
Ofada Rice:
First, heat up water in a pot until it boils.
Rinse rice thoroughly with cold running water and then add to the pot of boiling water.
Add salt and oil(vegetable oil).
Cooked for 35mintues or until it’s ready.
